Recipes are important because it is the design of food production. With this you can reproduce a certain dish with ease and precision. Recipes can also capture a facet of a culture of a certain place (e.g. the food the natives eat, the materials they used to cook their food, the way they prepare their food) which is reason enough to preserve them.

And Western Indian recipes consist of Baked Fish, Prawn Curry and Rice with Crabs for the reason that Western India includes several coastal regions.
